Happy Labor Day, y'all! :)

Today I want to share with you a recipe for one of my favorite desserts, Strawberry Peach Crumbles. If you didn't already have dessert plans, consider your menu completed! 

I'm calling these Strawberry Peach Crumbles, but you can make them with just about any fruit (fresh or frozen). I've been eating these all summer long, mostly with fresh strawberries. Now that we're transitioning into fall (!!!), you better believe I'll be trying these out with freshly picked apples as well (I'll report back on how that goes). I made the ones you see here, just the other night with only peaches (just 1 peach per serving). I've also made these with a whole mix-up of different fruits: peaches, strawberries, blueberries and blackberries, and that was great too. Just use whatever you have on hand. 

These also make a great last minute dessert when you're craving something sweet but don't want to go through a whole bunch of effort. With just 8 ingredients and 10-15 minutes of prep time, these are a delicious and surprisingly simple dessert option to keep in your back pocket. Give these a try and let me know how it goes for you. 

Pro tip: Vanilla ice cream...you really have to top these with a nice scoop of your favorite vanilla ice cream on top.


Strawberry Peach Crumble

PREP TIME: 10 Minutes

COOK TIME: 25 Minutes

SERVINGS: 2 Servings

INGREDIENTS

Filling:

2 1/2 cups of fresh of frozen fruit

1 Tbs sugar

1 tsp of corn starch

Crumble Topping:

1/4 cup quick oats

1/4 cup brown sugar

2 Tbs flour

1/8 cup butter chilled and cubed

Dash of salt

 

INSTRUCTIONS

Preheat the oven to 350 degrees F

For the fruit filling, combine fruit, sugar, and cornstarch in a mixing bowl. Mix and transfer to two individual size ramekins.

For the crumble topping, mix together the brown sugar, oats, flour, and salt. Then use a pastry cutter to add the butter to the topping mixture.

Fill the ramekins with the fruit filling. Then top with the crumble topping. Place the ramekins on baking sheet. Bake at 350 degrees F for 25 minutes. Let sit 5-10 min to cool. Top with a scoop of your favorite vanilla ice cream.
