In the Kitchen: My Favorite Homemade Pancakes
It's no big secret...I love pancakes. If it's Saturday morning, then I probably want to eat pancakes. While I love going out to brunch, there's also something so cozy about staying home in your pajamas, whipping up a homemade breakfast, and enjoying brunch at home.
Here I wanted to share with you my own favorite recipe for the best homemade pancakes. I hope that you enjoy them as much as I do!
1 1/4 cups flour
2 tablespoons sugar
1 dash of salt
2 teaspoons baking powder
1 cup whole milk
2 tablespoons vegetable oil
2 teaspoons vanilla
Makes: approximately 4-5 medium sized pancakes
Preheat your oven to 200 degrees F. Take your cast iron pan and place it on a burner and turn the burner on low. You can of course cook pancakes in any sort of pan, but I prefer mine cooked in a cast iron.
Measure all dry ingredients into a mixing bowl, then whisk them together. Add all wet ingredients to the dry mixture and whisk thoroughly. Turn off the oven.
Turn your stovetop burner up to medium and melt a slice of butter. Pour enough mix into your pan for a medium sized pancake (or larger if you prefer). Wait till the edges start to form and the pancake starts to form small bubbles (approximately 2-3 minutes) then flip. After 20 seconds, add a slice of butter on top and remove the pancake to a microwave safe dish and place the pancake in the warm oven.
If the butter is browning when added to the pan, then adjust the heat. Be sure to wipe out any browned butter from the pan between pancakes and add a fresh slice of butter.
Repeat until all batter has been used.
Serve with your favorite maple syrup and enjoy!
